Chocolate Chip Muffins
Chocolate chip muffins.
Who does not love a muffin? Especially one with chocolate in them.
I figured that there had to be a way to have them a bit healthier.
I own a Whisper Mill grain grinder, please see my you tube channel to see it working and much more. So I set to and ground my wheat into wholemeal flour . The link is where I purchased mine from many years ago.
The taste of fresh ground flour is the best. It is so nice to know what goes into you food.
The dextrose was to replace the sugar, some people think it is better for the body than sugar and I just like how well it goes in baked goods. You can use regular sugar if you want.
I find that muffins are best eaten on the day they are made and 15 minutes out of the muffin when they are mouth warminly is the best. The chocolate just melts on the tongue.
As with all muffins, do not over mix the batter. Mix until just combined. Otherwise, they get tough. And bake until a skewer or cake tester comes out clean.
