When life gets mundane and tiresome, make some peanut brownies. Sometimes there are just not enough hours in the day and you still need to keep on going. You need food for lunches, morning tea or just something to offer a guest. Well these little puppies fill that spot and they are easy to make.
They keep very well. I had them for a week in the work van when we were away; and they only just got better. The peanuts become softer and took up more flavour. When we arrived home, we promptly sat down and polished off the last of them with a good cup of tea. And with my husband saying “is that all? I want some more”. So they are on my to make list next time we are on the building site.

They are such a perfect biscuit for when on the building site, they are filling and easy to eat. Building sites are not the most food friendly places, often no power, dirty and noisy. Often no water to wash hands with before you eat. And generally just not a pleasant place to eat food in. But yet many many men and some women do, me being one of those women.
So a biscuit can be a welcome food with minimal fuss. And can give a good bit of energy to keep on going. And something to share with your mates. Everyone loves a home-made biscuit.

Serves: 30
Ingredients
  • 125 grams butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 ½ cup plain baking flour
  • 1 teaspoon baking powder
  • pinch salt
  • 1 tablespoon cocoa
  • 1 cup peanuts
Instructions
  1. Cream butter and sugar until light and fluffy. Add egg and beat well. Sift flour,baking powder, salt and cocoa together. Mix into creamed mixture. Add peanuts and mix well. Roll tablespoon of mixture into balls. Place on greased oven tray. Flatten with a fork. Bake at 180º Celsius for 15 minutes or until cooked.
  2. Makes approx 30.
Notes
I left the peanuts whole, but you can chop them to a chunkier size.
