Peanut Butter and Banana Muffins

Muffins are a wonderfully easy thing to make when you are in a hurry and you need to have something quick and fast on the table. They are also a good way of sneaking in fruit and vegetables.

For me, there is something about peeling off a paper case, it is kinda like un warping a present and wondering what is in there. Or that roses chocolate, waiting for that sweet something.

Lining the pans with paper also keeps the pans clean, I do spray my paper cases with oil, just to make sure they do not stick.
For this recipe you can use crunchy peanut butter or smooth or almond or nut butters. Your choice as to what ever you have on hand at the time.

When I mashed my banana, I left it fairly chunky. Never over mix a muffin batter. It will make them tough.

I have used soy milk, but you can use cows milk or almond or rice. What ever milk you can drink.
